This is a super simple recipe that is easy to substitute other items to your liking.
You can use this glaze on a pork roast or pork chops if you prefer. If you do not care for seeded mustard, just leave it out and add more Dijon. Also, adding other fresh herbs is great as well. Get creative with this dish, and have fun with it.
Yield 6-8 servings
2 Pork loins
1 Tbsp olive oil
1 small onion, chopped
2 cloves garlic, minced
⅓ cup sage, chopped
¼ seeded mustard
¼ Dijon mustard
1 Tbsp soy sauce
½ cup pure maple syrup
⅓ tsp salt
⅛ tsp pepper
Heat the oven to 400℉
Heat the oil in a medium-sized skillet over medium heat. Add the onion and the garlic and sauté stirring frequently, until the onion is translucent. Remove from the heat and let cool.
In a food processor, puree the onion and garlic with the remaining ingredients and blend until smooth.
Pat dry the pork loins and season with a little salt and pepper. Cover the loins evenly and generously with the glaze. Bake for 40 minutes or until the internal temperature reaches 140℉. Remove from the oven and let rest before slicing and serving.
If you have extra glaze, you can serve it on the side for those who want to add more.
Serve with roasted potatoes, roasted vegetables, or a big green salad with a balsamic vinaigrette.
