Grilled Pizza
This is our favorite way to enjoy pizza. We use the grill all year long, even if it is snowing outside. I have been known to use this recipe when we have company over for dinner. It is a great way to get everyone involved, and better yet, each person can make their pizza to their liking.
1¼ cups water (110℉)
2 tsp active dry yeast
2 Tbsp olive oil + more for rising the dough
3½ cups unbleached flour
1 Tbsp salt
1 Tbsp sugar
To make the dough, combine the water and the yeast in a small bowl.
In a large bowl, combine the 2 Tbsp oil, flour, salt, and sugar. Pour the water and yeast mixture into the flour mixture and stir together by hand or with an electric mixer. Once mixed, knead the dough for 10 minutes. If using a mixer, use a dough hook for the kneading.
Place the dough in an oiled bowl and cover it with plastic wrap and a towel. Let the dough rise in a warm place until doubled in size, about one hour.
Punch the dough down, divide it into six pieces, and let it rest for ten minutes.
Heat the grill to medium-high heat. Place a round of dough on the grill and cook on one side with the lid down. Take the dough off the grill once it gets some grill marks on it, and it starts to bubble up. With the dough, cooked side up, put all your toppings on it. Turn the grill down to low. Place the pizza back on the grill, it should have the uncooked side on the bottom, and grill with the lid down until the dough cooks through, and the cheese melts. Continue this process with all of the pizzas. If you have enough room on your grill, you can do more than one at a time.
