A beautiful, perfect, ripe peach has summer written all over it. It is this hot time of year that makes eating a juicy fresh peach delectable. When the peaches are this flavorful, it is the best time to put them into ice cream. A fantastic way to beat the heat!
This recipe calls for a little vodka! But, of course, it is optional.
4 ripe peaches, halved and pitted
8 oz. mascarpone cheese
¾ cup whole milk
1 cup superfine sugar
3 Tbsp vodka
Put the peaches, mascarpone, sugar, milk, and vodka in a food processor or blender. Blend until smooth. Pour the mixture into an ice cream machine and follow the directions for the device you are using.
Once it is done churning, place the ice cream in the freezer to continue to harden. When serving, if it is too hard, leave it on the counter for about 15 - 20 minutes until soft enough to scoop.
Just Salt It, and enjoy!
