When we pick a ton of homegrown apples, that means Autumn has officially arrived at our home. This snack cake is moist, delicious, and simple to make. The mixture of spices, pumpkin puree, and apples scream cool fall weather! Pair the cake with a cup of coffee or a warm cup of tea, and you have yourself a perfect afternoon snack. It is a great way to break up your workday and take a little time out for yourself. 
 
½ pumpkin puree
2 Tbsp coconut oil, melted
¼ cup pure maple syrup
2 eggs
1 tsp vanilla
1¼ cup almond flour
½ tsp cinnamon
¼ tsp ground nutmeg
¼ tsp ground cloves
¼ tsp ground ginger
½ tsp salt
1 tsp baking soda
1 cup apples, peeled and diced small 
¼ cup walnuts, toasted and chopped 
Whip cream, optional 
 
Preheat oven to 350℉. Butter an 8 x 8-inch baking pan. 
 
In a medium-size mixing bowl, add pumpkin, oil, eggs, maple syrup, and vanilla. Stir until combined. 
 
Next, add the flour, cinnamon, nutmeg, cloves, ginger, salt, baking soda, and mix well. Gently fold in the apples and nuts. 
 
Pour the batter into the pan in an even layer. Bake for 30 minutes or until the top of the cake is lightly browned, and the middle is set. Pierce the center with a toothpick; it should come out clean. 
 
Let the cake cool to room temperature. Slice and top with whipped cream.
