Delicata squash is so sweet, tender, and delicious. Roasting it is the best way to prepare it because it intensifies the flavor and makes the skin soft and edible.
Yield 4 servings
2 delicata squash, cut in half lengthwise and seeds removed
2 fresh sage leaves, chopped
2 Tbsp olive oil
Salt and pepper
1 Tbsp pure maple syrup
Preheat oven to 375℉
Slice the squash into ½-inch half moons and place them on a baking sheet.
Sprinkle the sage on the squash, drizzle the oil over the top, and season with salt and pepper. Using a large spoon or your hands, toss the squash and sage until it is coated with the oil.
Place the squash in the oven and bake for 30 - 35 minutes until tender and golden brown. Stirring halfway through.
Transfer the squash to a serving plate or bowl and drizzle with the maple syrup.
