If you love the flavor and texture of a warm oozing egg and enjoy burgers, this recipe is right up your alley. This combination is a definite comfort food with the added mouthwatering gooey pepper jack cheese and roasted peppers.
You can serve the burger with a salad, fries, chips, or even hash brown potatoes for a rich and hearty breakfast.
Yield 3 hamburgers
1 lb. grass-fed ground beef
¼ lb. spicy Italian sausage
Salt and pepper
Pepper jack cheese, sliced
1 Tbsp olive oil
3 eggs
3 English muffin halves or gluten-free English muffins
Mayonnaise or avocado mayonnaise
1 roasted bell pepper, thinly sliced
Mix the ground beef and sausage and form the mixture into 3 hamburger patties. Season with salt and pepper on both sides.
Heat a skillet to medium-high heat. Gently place the patties in the pan and cover with a lid. Cook for 4-5 minutes, and turn the patty over. Continue cooking the other side while covered for another 3-4 minutes. Place the cheese on top of each burger and cook with the lid on until the cheese melts. The amount of time you cook each side will be up to you and your desired doneness. Once cooked to your likening, remove the lid and turn off the stove.
Toast the 3 halves of the English muffins.
In a large non-stick skillet, heat 1 Tbsp oil to medium heat. Carefully break the eggs, one at a time, into the pan, and cook until you have reached 3 soft sunny-side-up eggs. Do not overcrowd the pan. You may need to do each egg separately if you have a smaller pan.
Place the English muffin halves on a plate, top each with a mayonnaise layer and some sliced roasted bell peppers. Place each burger on the bell peppers. Gently put one egg on top of each burger and serve immediately.
