This is a fantastic recipe I found on feastingwithhome.com. With the flavors of the za'atar spice and the tahini sauce, this is by far our favorite way to eat cauliflower. 
 
1 whole cauliflower, leaves and stem removed
2 Tbsp olive oil
½ tsp salt
2 Tbsp za'atar spice 
1 cup water
¼ cup parsley for garnish
 
Tahini Sauce
½ cup tahini paste 
⅓ cup warm tap water
2 Tbsp lemon juice 
2 Tbsp olive oil  
2 garlic cloves, finely minced 
½ tsp salt 
¼ tsp pepper
 
Preheat oven to 425℉
 
Place the trimmed cauliflower in an oven-proof pan and rub the top and sides with olive oil and salt. Rub the za'atar over the top and sides. Pour the water into the bottom of the pan and cover tightly with foil. Bake for 45 - 60 minutes until tender. 
 
In a small bowl, combine all the ingredients for the tahini sauce and whisk together. 
 
Remove the foil from the cauliflower and continue baking for 20 - 30 more minutes until browned. 
 
Remove the cauliflower from the oven, place it on a platter, and garnish it with parsley. Slice the cauliflower into wedges and drizzle the sauce over the top or serve it on the side. It is best to serve it warm.
