If you like a little spice in your snacks and looking for something healthy to munch on, this is the perfect recipe for you. They are gluten-free, vegetarian, and vegan. Plus super simple to throw together anytime you are craving a snack.
15 oz, can of chickpeas, rinsed
1 Tbsp olive oil
1 tsp cumin
½ tsp smoked paprika
¼ tsp cayenne
½ tsp coriander
½ tsp salt
Preheat oven to 400℉
Once the chickpeas are rinsed, pat them dry and remove the skins by carefully sliding the skin off of each bean.
Place the beans in a bowl, add the rest of the ingredients, and toss to coat.
Pour the beans onto a baking sheet lined with parchment paper or a silicone baking mat. Bake for 25 - 35 minutes until the beans are crispy. Stir the beans halfway through.
Once the beans are crisp, place them in a small serving bowl, and serve immediately. They are best when they are still warm.
If the beans sit around too long before serving, they may soften up. You can re-crisp them by putting them back in the oven at 400℉ for a few minutes. Watch them carefully to be sure they do not burn.
