Fresh oysters are a delicacy all on their own. A little squeeze of lemon is all you really need. However, if you want to elevate your oysters to a whole other level, an acidic flavorful mignonette is the way to go.
This mignonette has fresh, clean flavors that serve to brighten up the flavor of each oyster.
8 oysters on the half shell
½ lime, juiced
1½ tsp ginger, minced
2 tsp shallot, minced
1 tsp serrano chili, minced
1 tsp minced cilantro
¼ cup olive oil
Crushed ice
In a small bowl, whisk together the lime juice, ginger, shallot, serrano, cilantro, and olive oil. Place the oysters on a platter with ice. Spoon a small amount of the mignonette over each oyster and serve immediately.
You can make the mignonette ahead of time, but do not put it on the oysters until you are ready to serve.
