I used to purchase Sweet Garlic Chili Jam until I made it myself. Not only is the jam delicious, but it is simple to make. If you have a lot of fresh peppers in your garden, this is a perfect way to use some up. It also makes for a great little homemade gift to give to others.

Yield 1 cup

10 cloves of garlic, peeled
1 Red bell pepper, seed, veins removed and chopped

6 chilies, roughly chopped (use a variety)
1 - 2-inch piece fresh ginger, peeled and roughly chopped
1 cup sugar
¼ cup water
2 limes zested
¼ cup rice vinegar
1½ Tbsp fish sauce
½ tsp soy sauce

In a food processor, purée the garlic, bell pepper, chilies, and ginger, into a thick paste. Place the paste in a skillet with the sugar, water, lime zest, rice vinegar, fish sauce, and soy sauce. Stir over medium heat until the sugar dissolves. Simmer at a low boil for 10 minutes, occasionally stirring.

Spoon the hot chili jam into a jar and store it in the refrigerator for up to three months.

Serve the jam with cheese and crackers, brush over a pork roast or chops, add into your vinaigrette, spoon over fish, or add into your stir-fry.

Just Salt It, and enjoy!
