This is another simple and fresh recipe. Perfect for a hot summer day. Grilling the corn makes it taste sweet and brings out the authentic flavor of the corn. Add in the spices and the rest of the ingredients, and you have a delicious salad to go alongside your favorite summertime dishes.
4 ears of corn
3 banana peppers, halved lengthwise, seeds removed and sliced
3 shishito peppers, halved lengthwise, seeds removed and sliced
1 jalapeño pepper, halved lengthwise, seeds removed and sliced
5 - 6 tomatoes, chopped
½ tsp paprika
¼ tsp salt
Pinch of cayenne pepper
½ tsp fresh thyme, chopped
½ tsp fresh oregano, chopped
⅛ tsp pepper
¼ cup olive oil + more for the corn
Heat the barbecue grill to medium-high heat. Remove the husks and silk from the corn and brush olive oil over the corn. Grill the corn, turning to a new side every few minutes until the kernels are slightly charred and tender. Remove from the heat and let them cool to room temperature.
Once cool, using a knife, slice the corn off each cob.
Add all the peppers, tomatoes, paprika salt, cayenne, thyme, oregano, pepper, ¼ cup olive oil, and corn in a medium-sized bowl. Stir together all the ingredients and serve.
