This is one of my new favorite summertime salads. When the nectarines, tomatoes, and jalapeños flourish in the garden, it makes for an easy throw-together salad for lunch or dinner.
Yield 6 servings
1 cup chopped tomatoes
2 nectarines, cubed
1 cup cubed jicama
2 cups sliced radicchio
2 limes, juices
2 jalapeños, seeds removed and sliced
½ cup chopped cilantro
2 Tbsp chopped chives
2 Tbsp olive oil
Salt and pepper to taste
Combine all the ingredients in a medium-size bowl and stir to combine. Let sit at room temperature for 20 minutes. Stir and season with additional salt and pepper if needed.
Serve with grilled chicken, grilled meat, or over fresh greens.
