Using frozen puff pastry makes this recipe simple and efficient for a quick appetizer or weeknight dinner. Fresh tomatoes right out of the garden or from a farmer's market are the best way to get the most flavor out of the galette. 
 
You can substitute the green olives for kalamata olives and add a little parmesan cheese to the top after it finishes baking. 
 
Serve with a green salad and a glass of Cabernet Sauvignon or a dry Chardonnay for a perfect meal. 
 
1 box of frozen puff pastry
1 cup ricotta cheese
2 large tomatoes, sliced
¼ cup sliced green olives
2 garlic cloves, sliced
Olive oil to drizzle
 
Preheat oven to 350℉
 
Thaw the puff pastry per the package directions. Once thawed, roll the pastry out and, using a pizza slicer, cut corners off to form a circle. Place the circle of dough onto a baking sheet. 
 
Spread the ricotta cheese on the pastry leaving a 1½ inch edge. Place the tomatoes olives and garlic on top of the ricotta. Fold the edges of the pastry in forming a circle that looks much like a pie or pizza. 
 
Place the galette into the oven and bake until the dough is golden brown and flakey. Approximately 25 - 30 minutes.
 
Drizzle the galette with high-quality olive oil, slice the galette, and serve while warm.
