One of my favorite foods is artichokes. I serve them all the time when they are in season. I know some people like dipping them in melted butter, but I like dipping them in avocado mayonnaise. My husband, however, loves to dip them in a mixture of mayonnaise, Worcestershire sauce, garlic, dill, and little salt and pepper.

Yield 2 servings

2 large artichokes
Olive oil
1 bay leaf

Conrad’s Dipping Sauce
⅓ cup mayonnaise
1 tsp Worcestershire sauce
½ clove garlic, finely chopped
¼ tsp fresh dill
Salt and pepper

Heat a large pot with water on medium-high heat until it starts to boil.

Trim the sharp points and the stalk off the artichokes. Place the artichokes, 2 Tbsp olive oil, and a bay leaf in the boiling water. Simmer for 45 minutes to an hour depending on the size of your artichokes.

If you are making Conrad’s dipping sauce, in a small bowl place the mayonnaise, Worcestershire, garlic, dill and salt and pepper to taste, mix and set aside.

Once the artichokes are done, remove them from the heat. Let them cool. Once they are easy to handle cut them in half. On the cut side, brush them with olive oil.

Heat the grill on high heat. When the grill is ready place the artichokes on the grill cut side down and grill for two to three minutes until there is a nice char on the artichoke. Remove them from the grill and serve with the dipping sauce of your choice.

Just Salt It, and enjoy!
