Ceviche is one of my favorite things to eat. I adore salmon and enjoy all the bright, fresh flavors of ceviche.
Add additional jalapeño to the ceviche if you want to increase the heat!
1 small shallot, minced
1 small tomato, chopped
½ jalapeño, minced
¼ cup chopped English cucumber
1 lb. salmon, chopped
5 limes, juiced
1 small avocado, chopped
Salt
Add the shallot, tomato, jalapeño, cucumber, salmon, and lime juice into a bowl. Stir to combine.
Place the bow in the refrigerator for 30 minutes to marinate.
When ready to serve, pour off some of the extra lime juice in the bowl. Stir in the avocado and season with salt if needed.
