Figs are some of our favorite things to eat. We love both fresh and dried. They have become a staple in our house. This is a recipe I used to make years ago and recently ran across it, and made it for some friends.
The port soaked figs are amazing on and their own and even better with this mixture of ingredients.
Yield 1 cup
1 cup dried figs, stems removed and cut into sixths
⅓ cup port wine
½ cup kalamata olives, pitted and chopped
2 Tbsp olive oil
1 Tbsp balsamic vinegar
2 Tbsp capers, rinsed and finely chopped
1 tsp fresh thyme, chopped
1 Tbsp fresh parsley, chopped
Salt and pepper
8 oz. room temperature goat cheese
½ cup walnuts, toasted and finely chopped
Crackers or Crostini
In a small pot on medium heat, add the figs and the port. Simmer for about 5 minutes until the figs are soft.
Preheat the oven to 375℉. Place the walnuts on a baking sheet and place them in the oven. Bake until lightly toasted, about nine minutes. Remove them from the pan and finely chop them.
In a food processor, combine the figs once they are cooled, the olives, olive oil, balsamic, capers, thyme, parsley, and salt and pepper. Pulse it all together until combined.
Spread goat cheese on the crackers or crostini, spoon a teaspoon of the fig spread on top of the cheese, garnish with the walnuts, and serve.
