This is a family favorite snack. I believe every time we have a big family gathering at someone's house I am asked to bring this snack. I always make a double or triple batch so that I can keep some at the house for my husband to munch on. If I don’t he sneaks into the bag I am bringing to the family party and eats some of that. It is quite addictive!

Yield 6 cups 

6 cups raw nuts, mix up any type, cashews, peanuts, pecans, walnuts, macadamia
1 tsp coriander, ground
1 tsp cumin, ground
4 Tbs unsalted butter
4 Tbsp dark brown sugar
4 Tbsp fresh rosemary, finely chopped
¼ tsp cayenne
1 tsp salt

Preheat oven to 350℉

Mix together all 6 cups of the nuts you have chosen and spread them on a large baking sheet. Bake them in the oven for 15 minutes stirring them a couple of times during the baking process. 

While the nuts are baking put a skillet on medium-high heat. Add the coriander and cumin and let it toast for a few seconds. Turn the heat down to low and add the butter, brown sugar, rosemary, and cayenne and stir until the butter and brown sugar are melted. It should take about 3 minutes. Keep the mixture warm until the nuts come out of the oven.

Once the nuts have slightly toasted pour them into a large bowl. Pour the warm spice mixture over the nuts add the salt and stir until all the nuts have been coated with the spices. Pour the nuts back on the baking sheet spreading them into a single layer and let them cool.
