These are the absolute best sugar cookies and frosting! If you like a soft sugar cookie with a delicious cream cheese frosting, then these are the ones for you. When I had my personal chef business years ago, I sold these cookies at a couple of local cafes here in Reno. They were such a hit that one local sandwich shop bought dozens of them from me for the University Of Nevada football team when they put together box lunches for the team on game days!
Cookie Dough
¾ cup unsalted butter, room temperature
3 oz. cream cheese, room temperature
1 cup sugar
2 eggs
1 tsp vanilla extract
3 cups unbleached flour
1 tsp baking powder
¼ tsp salt
In a large bowl or a stand mixer cream together the butter, cream cheese, and sugar. Once combined, add the eggs and the vanilla. Add the dry ingredients. Do not overwork the dough, it will make it tough. Place the dough in plastic wrap and refrigerate for two hours.
Preheat oven to 350℉
Remove the dough from the refrigerator and roll out half of the mixture to about a ¼ to a ⅛ of an inch in thickness. Cut into desired shapes. Place the shapes on to a baking sheet lined with a silicone baking mat or parchment paper. Bake for 7 minutes or until the bottom edges start to turn a very light brown.
Remove the cookies from the pan to a cooling rack. Once cooled frost the cookies with a nice thick spread of frosting.
Frosting
6 oz. cream cheese, room temperature
½ cup unsalted butter, room temperature
1 tsp vanilla extract
2 Tbsp milk
4 ¾ cups powdered sugar
In a large bowl or stand mixer, add all the ingredients and mix until creamy.
