A lot of people love traditional chocolate chip cookies. The recipes are always about the same, but they turn out just a little different. That is just how baking works. One small adjustment can change your end result.
I am sharing my son Adam and daughter Alexa’s favorite recipe. I used to sell these cookies and a few others to a local coffee house and sandwich shop when I had my own catering company. Adam and Alexa requested these treats in the house all the time when they were little. You will see at the bottom that I included their time and process for warming them up. They are now in their twenties and still warm them up in the microwave when they are visiting. So funny!
Yield 2 dozen
2 sticks, 16 ounces total, unsalted butter room temperature
¾ cup sugar
¾ cup brown sugar, packed
2 large eggs room temperature
2 tsp vanilla extract
1 tsp salt
1 tsp baking soda
3 ½ cups unbleached flour
2 cups semi-sweet chocolate chips
Preheat over to 375℉
In a large bowl or a large mixer beat the butter and sugar until fluffy. Add the two eggs and continue mixing until combined. The mixture should be a light yellow color. Add the vanilla, salt, and baking soda and mix until thoroughly combined. Remove the bowl from the mixer (if that was what you were using) and add the flour one cup at a time. Stir with a wooden spoon until all the flour is incorporated into the dough. Add the chocolate chips. Do not over stir the dough. Just mix enough to disperse them evenly throughout the dough. Overworking any dough makes the end product tough.
Roll the dough into 24 balls and place them on two large cookie sheets. Bake the cookies for 12 minutes or until just lightly browned and a little soft in the middle. They will continue cooking as they cool. Remove them from the pan to cool on a wire rack.
It is best to eat them when they are still warm. The gooey chocolate is so good. But, if you are eating the cookies later, let them cool and put them in an airtight container.
If you want to eat them warm after they have cooled, Adam and Alexa suggest warming the cookies by placing them on a paper towel and microwave on high for about 20 seconds. Yummmm!
