This is my new favorite breakfast! You can make four servings in just five minutes. As much as I love my green smoothie that I drink almost every day, this is such a treat to have, especially after a big workout. It also keeps me full longer.
Yield 4 servings
1 can organic coconut milk
1 cup fresh or frozen fruit
½ cup chia seeds
Toppings of your choice
Blend the coconut milk and the fruit in a blender. Pour the mixture into a bowl and stir in the chia seeds. Once combined, cover and put in the refrigerator overnight or for at least three hours. I usually divide mine up into four small bowls or jars for individual portions before refrigerating.
My favorite fruits to use are those that are in season or ones I previously froze in the summer from our garden. Our fresh peaches are the absolute best! But pick what you like, it can be berries, stone fruits, pears, banana, any kind will work.
For the toppings, I like chunks of more fresh fruit, plus I will add any of these items depending on what sounds good to me that day: hempseed, nuts, cacao nibs, or unsweetened coconut flakes.
