This is one of my husband Conrad’s favorite items for breakfast. It is also my children Adam and Alexa’s favorite as well, even as adults. I still make it for them when they come home and visit. 

Good quality maple syrup is essential. I often use the Trader Joes syrup that comes in a big bottle that looks like a wine bottle. This gives it a nice lightly sweetened flavor but not too sweet. If you are feeling inclined, you can add seeds, bran, other nuts, and other dried fruits. Always put the dried fruits in after it is done baking and cooled. The fruit will get really hard if you bake it in the oven. 

Yield 10 - 12 servings

3 cups old fashioned oats
1 cup almonds, chopped
1 cup walnuts, chopped
1 tsp cinnamon
1 cup unsweetened coconut
⅓ cup avocado oil
¾ cup pure maple syrup
1 cup raisins
1 cup cranberries

Preheat oven to 375℉

In a large bowl, add the oats, almonds, walnuts, cinnamon, and coconut and mix thoroughly. Add the oil and the maple syrup and mix thoroughly again. Spread the mixture evenly on a large baking sheet and bake for 15 minutes. 

Remove the granola from the oven and stir it around and spread it back evenly over the pan again. Let it bake for another 10 minutes, checking on it occasionally so that it does not get too dark. You want it a nice golden brown. 

When it is done, let it cool in the pan. Once it is completely cool, stir in the fruit and put it in an airtight container. It will last 3 - 4 weeks. However, ours never makes that long.
