2½ cups unbleached flour
¼ cup sugar
2 tsp baking powder
½ cup butter, chilled and cut into chunks
Pinch of salt
1 large egg, whisked to combine the yolk and white
⅔ cup buttermilk, or enough to equal ¾ cup total when added with the whisked egg

1 cup blueberries, or other fruit
Preheat oven to 425℉
In a food processor, combine the flour, sugar, and baking powder. Next, add the butter to the flour mixture and pulse the food processor until the butter is in pea-sized pieces. Add the salt, and the egg and buttermilk mixture and pulse until combined. Do not over mix.
Remove the dough from the processor and place it on a work surface. With your hands very gently fold in the fruit.
Lastly, place the dough on a baking sheet lined with parchment paper or a silicone baking mat. Pat the dough into a circle that is 1-inch thick. Cut the circle into 8 wedges. Separate the wedges on the baking sheet and bake for 15-20 minutes until the edges and tops are lightly golden brown.
