In my mind, summertime and watermelon go hand in hand. Adding in the fresh flavor of mint leaves and the creamy texture of avocado makes this salad a warm-weather delight.
¼ cup red onion, sliced thin
¼ cup white vinegar
4 cups watermelon, cubed
1 cup cucumber, peeled, seeded, and cut into chunks
⅓ cup feta cheese, crumbled
1 avocado, cubed
⅓ cup mint leaves, torn
½ jalapeño, seeded and minced
2 Tbsp olive oil
3 Tbsp fresh lime juice
½ garlic clove, minced
Salt and pepper
In a small bowl, combine the onion and the vinegar and let it marinate for 10 - 15 minutes.
In a large bowl, add the watermelon, cucumber, feta, avocado, mint, jalapeño, and marinated onions.
Using the same small bowl as you did for the onions, make the dressing. Combine the olive oil, lime juice, garlic, and season with salt and pepper.
Pour the dressing over the salad, gently toss the mixture together, and season with salt and pepper to taste.
