This is a beautiful and delicious salad. Perfect for summertime entertaining. When all the stone fruit is in season, this salad is at its best. I most often pair it with some grilled chicken, pork, or a flap steak and some chimichurri on the side.
Grinding the nutmeg fresh from the nut is best. You can buy the whole nutmeg at most grocery stores. Use a zester to finely grate it right over the salad. I use our fresh local raw honey from MurrayRanch.com. It is beautiful honey.
Yield 2 servings
1 large peach or nectarine2 plumbs
2 apricots
4 Tbsp creme fraiche
2 Tbsp honey
¼ cup pistachios, finely chopped
½ tsp nutmeg, freshly ground from the nut
Thinly slice the peaches, plumbs, and apricots. Discard the pits, and you can save any leftover fruit for other uses. Finely chop the pistachios.
On two small plates spread 2 Tbsp of creme fraiche on each in a circular pattern. Your circle should be about 4 ½ inches in diameter. Place the sliced fruit around the outside of the circle in a pattern using a slice of each and then place another slice of each until you have made a full circle.
In a gentle stream, pour the honey over the top of the fruit and creme fraiche. Sprinkle the pistachios over the salad and zest the nutmeg over the salad.
You can serve the salads right away or keep them in the refrigerator for up to an hour before serving.
