We have become obsessed with pickling cucumbers, garlic, onions, and peppers. Well, it is not exactly “we,” it is my husband. He enjoys the experimentation and originality of making his recipes. 
 
Get creative when pickling and use any of your favorite vegetables or fruits. You can make a mixture of different types or stick with just one per jar.
 
Adding fresh herbs or using different types of vinegar also adds another dimension of flavors. If you are pickling onions you can add in a slice of beet to turn the onions a beautiful purple color or a slice of fresh turmeric to turn them a yellow color. Think of it as a fun, creative project that tastes great every time. 
 
Yield 1 pint-sized jar  
 
1 - 1½ cups sliced vegetables or fruits of choice
1 cup white vinegar
1 cup water
2 tsp salt 
1 tsp black peppercorns
1 tsp coriander
1 tsp mustard seeds
1 bay leaf
1 pint-sized glass jar with a lid
 
Slice the vegetables or fruits of choice. 
 
Combine the vinegar, water, and salt in a small pan on medium heat. Stir the liquid over the heat until the salt dissolves. Remove the pan from the stove and let it sit until your jars are ready. 
 
In the jar, add the spices first. Next, add the vegetables or fruits. Pour the liquid over the vegetables or fruits until they are completely submerged in the water and leave a little headspace in the jar. 
 
At this point, you can go through the canning process so that it is shelf-stable, or you can simply keep it in the refrigerator. Ours do not last long, so we put our jars right in the frig. 
 
 Just Salt It, and enjoy!
