These pumpkin seeds are so tasty and totally addictive! The nutritional yeast's cheesiness mixed with the dried herbs and salt makes for a perfect healthy snack. 
 
If you have never tasted nutritional yeast, I highly recommend trying it. My other favorite way to enjoy it is on popcorn. 
 
Yield 1½ cups 
 
1 ½ cups raw pumpkin seeds
3 Tbsp olive oil
3 Tbsp nutritional yeast
1½ tsp dried basil
1½ tsp dried oregano
¾ tsp sea salt
¼ tsp garlic powder
 
Preheat oven to 300℉
 
Fill a medium-sized pot halfway up with water and bring it to a boil. Turn the heat off and add the seeds. Let the seeds sit in the salty water for 10 minutes. Pat dry. 
 
In a small bowl, mix the nutritional yeast, basil, oregano, salt, and garlic powder. 
 
Place the seeds in a baking dish and drizzle with the oil. Stir to coat the seeds. Sprinkle the nutritional yeast mixture over the oiled seeds and stir to combine. Spread the seeds out so they are in a single layer. 
 
Bake for 30 minutes, stirring the seeds every 10 minutes. They should be crispy and golden brown when done. 
 
Just Salt It, and enjoy!
