Apple season means it is time to make my favorite apple butter.
Peanut butter sandwiches are a nostalgic delight. Then apple butter to the sandwich, and you have the most delicious, satisfying bite ever. It’s a perfect breakfast, lunch, snack, or even dinner.
Apple butter is simple to make and can be served over pork or chicken. And it makes for a fabulously decadent quesadilla. Brie, Caramelized Onions, and Apple Butter Quesadillas.
Yield 5¼ cups
5 lbs. apples, peeled, cored, and cut into chunks
1 cup apple juice or apple cider
2 Tbsp orange juice
1 cup brown sugar
¼ cup white sugar
1 tsp cinnamon
In a large stockpot on high heat, combine the apples and the two juices. Bring to a boil and reduce the heat to low. Cover the apples and simmer, occasionally stirring until they are soft. Approximately 30 minutes.
Remove the stockpot from the heat and purée the apples in a blender or food processor. Return the apple purée to the pot and add the two sugars and the cinnamon. Cook on medium-high heat while stirring until the purée starts to thicken.
Reduce the heat to low, continue simmering, and occasionally stirring for 40 minutes.
Let the apple butter cool and then transfer it to jars and store in the refrigerator for up to 1 month.
