This is the most decadent and delicious quesadilla. After trying it, you will have a whole new love for a cheesy quesadilla. It is perfect for lunch or dinner alongside a green salad. It also makes for a great appetizer.
Yield 1 Quesadilla
¼ of a small onion, thinly sliced and caramelized onions
1 Tbsp butter
2 6-inch flour tortillas, or any other type of tortilla you prefer
3 - 4 Tbsp of apple butter
4 - 5 thin slices of brie cheese
1 Tbsp olive oil
In a non-stick skillet on medium heat, melt the butter and add the onions. Continue cooking and occasionally stirring until the onions are golden brown. Remove the pan from the heat, remove the onions from the pan, and set aside.
On one tortilla, spread a think layer of the apple butter. Next, place the cheese and onions on the apple butter. Lastly, place the second tortilla on top.
In the same non-stick skillet, heat the oil on medium-high. Place the quesadilla in the pan and cook until golden brown. Turn the heat down to medium, flip the quesadilla over, and cook on the second side until golden brown and the cheese begins to melt. Remove the quesadilla from the pan.
Slice the quesadilla into wedges and serve.
