If you love peanut butter, then you are going to adore these cookies. You won’t even know they are gluten-free. The drizzle of the peanut butter over the top is the pièce de résistance!
 
Yield approximately 30 cookies
 
1 cup peanut butter + more for drizzling 
¾ cup sugar
½ cup brown sugar
½ cup butter, softened
1 tsp vanilla extract
2 eggs
1½ cups gluten-free 1:1 flour blend
1 tsp baking soda
¼ tsp salt
1 cup chocolate chips
 
Preheat oven to 350℉.
 
In the bowl of a stand mixer or bowl with a hand mixer, add the peanut butter, butter, sugar, and brown sugar and mix until combined. Next, add the eggs and vanilla and continue to mix until you have reached a smooth consistency. 
 
In a separate bowl, combine the flour, baking soda, and salt. Add the flour mixture to the wet mixture and mix until just combined. Lastly, add the chocolate chips and stir until evenly incorporated. 
 
Line baking sheets with silicone baking mats or parchment paper. Scoop tablespoon-size balls of dough onto the baking sheet. Gently press the top of each ball with the back of a fork, both horizontal and vertical, to form a crisscross. 
 
Bake for 8-10 minutes and let cool on a cooling rack. 
 
In the microwave, warm the second cup of peanut butter and gently drizzle the warm peanut butter over each cookie. Store the cookies in an airtight container.
