This recipe has summer written all over it. The cool balsamic berries and the rich ricotta cream pair perfectly together. It is a lovely dessert to serve after dinner on a hot summer evening. 
 
Yield 2 servings
 
2 Tbsp good quality balsamic vinegar
1 Tbsp coconut sugar
1 Tbsp honey + ¼ cup honey
1½ cups sliced strawberries
1 cup blueberries
10 oz. ricotta cheese
1 tsp orange zest
½ tsp vanilla extract
⅛ tsp cinnamon
Fresh mint for garnish (optional) 
 
In a small bowl, whisk together the vinegar, sugar, and 1 Tbsp honey until the sugar has dissolved. 
 
In a medium-size bowl, place the strawberries, blueberries, and the vinegar mixture and gently stir together. Let the fruit rest in the refrigerator for 20 minutes. 
 
While the fruit is resting, add the ricotta, ¼ cup honey, zest, vanilla, and cinnamon into a food processor. Blend the ingredients until smooth. 
 
Spoon the fruit into a bowl or glass and top with the sweet ricotta and a mint leaf.
