This apple crumble is a delicious change from the traditional apple crisp or crumble. The gingersnaps give it a spicy kick and a little extra sweetness. Serve it alongside a dollop of ice cream or a warm cup of our Hot Chocolate
 
8 gluten-free gingersnaps
1 cup sprouted oats
2 Tbsp gluten-free flour
1 tsp ground cinnamon + ½ tsp for the apples
Pinch of salt
¼ cup cold butter + 1 Tbsp melted butter for the apples
7 medium-size apples, peeled, cored, and chopped into bite-size cubes 
3 Tbsp coconut sugar
¼ tsp ground ginger
¼ tsp ground nutmeg
Plant-based ice cream  or dairy ice cream (optional)
 
In a food processor, add the gingersnaps and blend until cookies resemble a sand-like texture. Next, add the oats, flour, 1 tsp cinnamon, and a pinch of salt. Blend until the oats are roughly chopped up, and ingredients are thoroughly combined. Pour the mixture into a small bowl. Cut the cold butter into small pieces. Add the pieces to the gingersnap mixture and use your fingers, pinching to combine the butter into the rest of the ingredients. Set aside.
 
In a large bowl, add the apples, sugar, ginger, nutmeg, ½ tsp cinnamon, melted butter, and stir to coat the apples. Pour the apples into an 8 x 8-inch baking dish and top with the gingersnap mixture. 
 
Bake for 45 minutes or until the top is lightly browned and the apple juices are bubbling. Let cool on a cooling rack. 
 
Serve warm with a scoop of ice cream.
