This recipe is perfect for serving at a dinner party when you want your dessert to make a statement. In addition, it comes together very quickly.
Fresh ripe sweet cherries are best for this dessert.
½ lb fresh cherries, pitted
⅛ cup cherry liqueur
¼ cup sugar
1 Tbsp fresh lemon juice
¼ cup Brandy
Vanilla ice cream or dairy-free vanilla ice cream
Combine the pitted cherries and cherry liqueur in a bowl and allow to sit for an hour, stirring the cherries periodically.
Add the soaked cherries and the juices to a large, heavy skillet. Sprinkle on the sugar and lemon juice and bring to a boil over medium-high heat, stirring to dissolve the sugar. Allow to simmer for 5 minutes.
Carefully pour the brandy into the skillet and light the liquid toward the outside edge of the pan with a long match or long lighter. The skillet will flambé, and the fire may be almost invisible.
Allow the fire to burn out by itself, approximately 2-3 minutes. Scoop the vanilla ice cream into two bowls and top with the cherry mixture. Serve immediately.
