I love fresh peaches, and we always have extra to freeze from our summer crop to use throughout the year. Making peach frozen yogurt makes me feel like it is summertime, even when it is not. 
 
4 cups of sliced fresh peaches skinned or frozen defrosted slices
½ cup coconut sugar
3 cups 2% plain Greek yogurt
1 tsp vanilla
 
Place 3 cups of peaches and sugar into a food processor and pulse until smooth. Add the yogurt and vanilla and pulse until thoroughly combined.
 
Transfer the yogurt into an ice cream maker and freeze according to the manufacturer's directions. 
 
Dice the remaining 1 cup of peaches and add it to the yogurt when processing. Again, use the manufacturer's directions for adding the fruit before the end of the freezing time. 
 
Serve immediately or place it in an air-tight container in the freezer. 
 
Before serving the frozen yogurt after it has been in the freezer, place it on the counter at room temperature to soften it up a bit.
