Za’atar is a Middle Eastern spice mix. It can be used on a multitude of items such as chicken, meat, fish, vegetables, and hummus. The blend of dried herbs and spices gives a spicy herbiness to any dish.
Yield 4 servings
Preheat oven to 400℉
4 - 6 carrots, peeled and sliced lengthwise
3 Tbsp olive oil
Salt and pepper
½ cup plain greek yogurt
¼ cup za’atar in olive oil
2 tsp red pepper flakes
2 Tbsp chives, sliced thin
2 Tbsp dill leaves
Preheat oven to 400℉
Drizzle olive oil over the carrots, sprinkle with salt and pepper and toss to coat. Roast the carrots for 20 - 30 minutes until softened and golden brown. Remove them from the oven and let them cool.
Smear the yogurt on the platter and place the carrots onto it. Spoon the za’atar over the carrots, sprinkle the red pepper flakes, chives, and dill on top, and serve.
