This pork loin with spiced rub and garlic sauce is fantastic. The additional plum sauce brings it all together with a bit of sweetness from the ripe plums.
This meal pairs well with rice, polenta, or green salad.
Yield 4 servings
1 pork loin
1 Tbsp olive oil
Rub
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
½ tsp dried thyme
Salt and pepper
Garlic Sauce
3 cloves garlic, minced
¼ cup maple syrup
2 Tbsp tamari
2 tsp dijon mustard
1 Tbsp olive oil
Plum Sauce
2 Tbsp butter
1 Tbsp olive oil
½ onion, sliced
6 small ripe plums, sliced
Preheat oven to 375℉
In a small bowl, combine all the ingredients for the rub.
Pat dry the pork and massage a little olive oil on it. Next, take the spice mix and rub it on the pork loin.
In a small bowl, whisk together all the ingredients for the garlic sauce.
In a skillet, heat 1 Tbsp olive oil to medium-high heat. Sear the pork until browned on all sides. Transfer to a baking pan, and brush the pork with the sauce keeping 2 Tbsps of the sauce for later. Bake for 45 - 50 minutes until the internal temperature reaches 145℉. Tent the pork with foil to rest for10 minutes.
Melt the butter with olive oil in a skillet and add the onion. Sauté until the onion is caramelized. Add the plums and continue sautéing for 1-2 more minutes until the plums have softened. Remove the pan from the heat and add the remaining 2 Tbsp of sauce, and season the plum sauce with salt and pepper to taste.
Slice the pork and serve with the plum sauce.
