This is one of my husband's favorite salads. It is a satisfying meal for lunch or dinner, especially in the heat of the summer.
You can increase or decrease the meats and cheese to your liking. And you can add croutons to make it more like a chopped-up Italian Hero Sandwich.
Yield 2 servings
½ cup green olives, sliced
¼ cup jalapeños in brine, sliced
¼ small red onion, thinly sliced
1 cup cherry tomatoes, halved
6 oz pearl mozzarella balls, drained
2 oz. fontina or provolone cheese, sliced into thin strips
4 oz. ham, sliced into thin strips
4 oz. salami, sliced into thin strips
4 romaine lettuce leaves, sliced
1 small head of butter lettuce, sliced
3 Tbsp red wine vinegar
3 Tbsp olive oil
1 tsp dried oregano
Salt and pepper
Add the olives, jalapeños, onion, tomatoes, mozzarella, fontina, ham, salami, romaine lettuce, and butter lettuce into a large bowl, and toss to combine. Next, drizzle the salad with vinegar and oil, and add the oregano, salt, and pepper. Toss to coat.
Serve on a large platter or on individual plates.
