If you enjoy marinated vegetables, this salad is the one for you. It is fresh, delicious, and pairs well with just about anything you are serving alongside it. 
 
Yield 2 servings
 
¼ cup red wine vinegar
1 Tbsp olive oil
¼ tsp salt
⅛ tsp pepper
2 Tbsp chopped cilantro
½ English cucumber, julienne cut
2 carrots, julienne cut
¼ small red onion, thinly sliced
1 zucchini, julienne cut
 
For the dressing, whisk the vinegar, oil, salt, pepper, and cilantro in a small bowl. 
 
In a large bowl, combine the cut cucumber, carrots, onion, and zucchini and toss. 
 
Pour the dressing over the vegetables and let them sit in the refrigerator for 2 - 3 hours, tossing halfway through. 
 
Toss the salad and season with additional salt and pepper if needed before serving.
