Warm oatmeal on a cold morning is the best! It is not only nourishing but tastes fabulous and gives you added energy throughout the day. Oats are high in fiber and antioxidants, 100% whole grain, and gluten-free and vegan friendly. (Always check the package to be sure your oats are gluten-free.)
 
I love oatmeal and enjoy getting creative with it. This recipe is one of my favorites, but you can add or remove any additions to or from the recipe. 
 
Try adding dried fruits, fresh persimmon, banana, or a variety of fresh berries to the oatmeal. If you don’t like walnuts, substitute almonds, pecans, or macadamia nuts. Or leave the nuts out altogether. For a sweetener, you can substitute honey or brown sugar. 
 
Yield 2 servings
 
⅔ cup organic sprouted rolled oats
1½ cups oat milk or any nut milk
1 pinch of salt
1 medium-size apple, cored peeled and diced 
¼ cup unsweetened coconut flakes
2 Tbsp sunflower seeds
⅓ cup walnuts, chopped
1 tsp cinnamon 
Maple Syrup, drizzle over the top
 
In a small pot on medium heat, bring the oats, milk, and salt to a boil. Reduce the heat to low and simmer the oats while stirring for about 5 - 7 minutes until the oatmeal cooks and thickens. 
 
Ladle the oats into two bowls and add the apples, coconut, sunflower seeds, walnuts, and cinnamon into each bowl. Gently stir in the toppings. Add a drizzle of maple syrup to each bowl and additional milk if you want to thin it out. 
 
Just Salt It, and enjoy!
