This is a fun spin on a margarita. Allow a few days for the tequila to infuse before making the drink. The kick of the jalapeño and sweetness from the pineapple act as a perfect addition to your favorite tequila.

Pineapple Jalapeño Infused Tequila
2 cups tequila
6 - 8 slices of pineapple
1 jalapeño, sliced in half lengthwise and seeds removed

Margarita
1½ oz Pineapple Jalapeño Infused Tequila
1 oz Cointreau
½ lime, juiced
Ice

In a large jar or sealable glass pitcher, add all the tequila, pineapple, and ½ a jalapeño.
Use the whole jalapeño if you want it extra spicy. Seal the jar or pitcher tightly and allow to infuse for 5 - 7 days on the counter, out of direct sunlight.

After three days, taste the infusion and remove the jalapeño if the spice is to your liking. Continue tasting each day until lit reaches the flavor you enjoy.  After 5 - 7 days, use a fine-mesh strainer to strain the infused tequila discarding the pineapple and jalapeño.

Using a funnel, fill a jar, pitcher, or bottle with the infusion. Store the infusion at room temperature away from direct sunlight or in the refrigerator.

To make the margarita add all the ingredients to a glass, stir, and add ice. Garnish with a small slice of pineapple, lime, and jalapeño.

Just Salt It, and enjoy!
