This is my breakfast almost every day. My morning routine is the alarm waking us up at 5:45 am, my husband gets out of bed around 6 to get us coffee. He makes it the night before and sets the delay start. He knows I love coffee first thing in the morning. He is so sweet. He brings me the coffee in bed and hops back in with me to sip and talk through our schedule for the day.
Once he gets up to hit the shower, I change into my workout clothes and head down the hall to our gym and workout for anywhere between 30 and 60 minutes. After my workout, it is time for drinking my smoothie and drinking lots of water.
I like this smoothie because it is so versatile, it tastes fresh and is a healthy way for my gut to start the day.
Yield 1-2 servings
2 handfuls of raw fresh spinach, kale, or any mixture of dark greens
½ an avocado
Juice of ½ a lemon
3 sprigs of fresh mint
Fresh turmeric, ½ inch piece peeled
Fresh ginger, ½ inch piece peeled
2 cups of water
A handful of ice cubes
Combine all the ingredients in a blender and blend it until smooth.
You can add so many additional items. I love it just as the recipe is but when I feel like adding something different; I have chosen parsley, pineapple, melon, basil, beets, asparagus, blueberries, cucumbers, dried unsweetened coconut or orange slices.
This recipe evolved after I read The Plant Paradox by Dr. Steven Gundry. This is a take on his green smoothie.
