Simple, elegant, and delicious, that is how I would describe chocolate covered strawberries. It’s an excellent choice for a quick and easy dessert with brunch or after dinner with a glass of champagne. 
 
2 lbs. fresh ripe strawberries, washed and dried thoroughly
6 oz. dark chocolate chips
 
Boil water in a small pot. Once it is boiling, reduce heat to a low simmer and place a bowl that fits on top of the pot to make a double boiler. Add the chocolate chips to the bowl and stir until melted. 
 
Remove the bowl from the heated pot. Hold the strawberries by the stem or leaves, dip into the chocolate, lift and swirl, and place them on wax paper to dry. Serve them right away or put them in the refrigerator until ready to serve.
