This is a perfectly simple appetizer to make. It is sweet, salt, and acidic making it a delightful pleasureful one-bite snack.
 
Yield 4 servings 
 
2 strips bacon
3 Tbsp maple syrup
8 fresh figs, halved lengthwise
2 Tbsp sherry vinegar
1½ oz. goat cheese
Pinch of red pepper flakes
 
Cook the bacon in a skillet on medium-high heat until brown and crisp. Remove the bacon onto a paper towel-lined plate. Pour off all the bacon fat from the skillet besides 2 Tbsp.
 
Add the maple syrup to the 2 Tbsp of bacon fat left in the skillet and stir to combine. Place the figs halves cut side down in the skillet. Cook until the figs are slightly soft and caramelized. Remove the skillet from the heat to cool to room temperature. 
 
Slice the bacon crosswise into strips. 
 
Place the figs on a platter, and top with a small dollop of goat cheese and a strip of goat cheese.
 
Place the skillet back on the stove and heat to medium. Add the vinegar and stir into the juices. Continue to simmer until it is syrupy. Drizzle the syrup over the figs, top with a pinch of red pepper flakes, and serve.
